Fancy Stuffed Squash

I like to have a special vegetarian main dish on my holiday table - this is my best one yet - AND it’s healthy!

Ingredients:

1 small acorn squash

1 Tbsp olive oil

1 large sweet onion, cut in half and sliced thin

3 Tbsp Butter

2 garlic cloves, minced

¼ cup pecan pieces

¼ cup dried cranberries

1 - 2 tsp fresh Rosemary, minced

⅓ cup goat feta, crumbled

Salt & Pepper to taste

Preheat oven to 400F. Cut squash in half & remove seeds. Brush entire insides of squash with olive oil. Season with salt & pepper. Bake 25-35 minutes, or until fork tender. Remove from heat and flip squash so they’re cut side up.

Heat a non stick pan over medium low heat. Melt butter. Add onions and cook, stirring regularly, until onions are golden brown. Add garlic and stir a few more minutes.

Scrape into a medium bowl and let cool slightly. 

Add remaining ingredients and stir to combine. Distribute mixture evenly between the squash halves. Pop in the oven at 350F for 15-20 minutes, or until hot. Salt & pepper on top & enjoy!
